Meet one of my favourite loafs to bake! It is as gorgeous as it is delicious.
This coffee loaf is soft and refreshing and perfect to munch on whilst watching the sunset or curled up in front of a warm fire. I’m so lucky to call this beautiful little island home.
Vegan coffee loaf

- 170 g Butter (diary free or dairy)
- 100g Brown sugar
- 70g Caster sugar
- 195ml Plant based milk
- 3 tsp Instant coffee with a splash of water
- 200g Plain flour
- 1/2 tsp baking soda
- 200 g Icing Sugar (for the coffee icing)
- 90 g Butter (for the coffee icing)
- 3 tsp Instant Coffee and splash of water (for the coffee icing)
Instructions
To make the Loaf:
- Preheat the oven to 175c and line a loaf tin
- Cream together the butter and sugar
- Add the milk and combine
- In a separate bowl mix together the coffee and water and add the the mixing bowl
- Add the flour and the baking soda, combine until smooth
- Pour into the tin and bake for 45/50 minutes
- Leave for 30 minutes until chilled
To make the icing:
- Mix the butter and icing sugar in a separate bowl and add the coffee with a splash water
- Mix until smooth
- With a spatula, spread the icing on the loaf and top with flaked almonds
- Enjoy!
