Choco fudge sweet potato brownies

I was so surprised when I made these the other day, they turned out to be amazing.  I didn’t think these would work but they are chocolate heaven and very addictive! They are so fudgy, gooey and chocolatey – the best sweet fix ever!

Vegan choco-fudge sweet potato brownies

Serves: 8
Cooking time: 25 minutes

Ingredients

  • 2 Sweet potatoes
  • 2/3 cup Agave nectar
  • 1/2 cup Nut butter
  • 1 tsp Vanilla extract
  • 1½ tbsp Melted coconut oil
  • 1/2 cup Cocoa powder
  • 1 tsp Baking powder
  • 2/3 cup Flour
  • 1/4 cup Dairy-free chocolate chips
  • Pinch of salt
  • Vegan chocolate spread (optional for topping)
  • Vegan chocolate (optional for topping)

Instructions

  1. Preheat oven to 180c and pre-lined a tin.
  2. Place the two sweet potatoes in the microwave for 8 minutes until soft.
  3. In a mixing bowl, scoop out the sweet potato and add. Add the agave nectar, coconut oil, vanilla extract and nut butter. Stir until combined.
  4. Add the flour, cacao powder, salt, and baking powder and stir.
  5. Transfer the mixture to the pre-lined dish and spread until flat and smooth.
  6. Top with extra choc chips and place in the oven to cook for 25 minutes.
  7. Once baked, leave to cool and slice into squares.
  8. Top with a tsp of vegan choc spread per slice and a chunk of chocolate.
