I was so surprised when I made these the other day, they turned out to be amazing. I didn’t think these would work but they are chocolate heaven and very addictive! They are so fudgy, gooey and chocolatey – the best sweet fix ever!
Vegan choco-fudge sweet potato brownies

- 2 Sweet potatoes
- 2/3 cup Agave nectar
- 1/2 cup Nut butter
- 1 tsp Vanilla extract
- 1½ tbsp Melted coconut oil
- 1/2 cup Cocoa powder
- 1 tsp Baking powder
- 2/3 cup Flour
- 1/4 cup Dairy-free chocolate chips
- Pinch of salt
- Vegan chocolate spread (optional for topping)
- Vegan chocolate (optional for topping)
Instructions
- Preheat oven to 180c and pre-lined a tin.
- Place the two sweet potatoes in the microwave for 8 minutes until soft.
- In a mixing bowl, scoop out the sweet potato and add. Add the agave nectar, coconut oil, vanilla extract and nut butter. Stir until combined.
- Add the flour, cacao powder, salt, and baking powder and stir.
- Transfer the mixture to the pre-lined dish and spread until flat and smooth.
- Top with extra choc chips and place in the oven to cook for 25 minutes.
- Once baked, leave to cool and slice into squares.
- Top with a tsp of vegan choc spread per slice and a chunk of chocolate.
