Sugar and spice and all things nice! Spiced cranberries and apples finished with a cake-like crumble topping making for a delicious pudding served warm with a big scoop of vanilla Jersey ice cream!

Cranberry and apple cobbler

- 150g Fresh cranberries
- 5 Apples
- 1 tsp Ground cinnamon
- 1 Egg
- 100ml Milk
- 150g Butter
- 300g Plain flour
- 2 tsp Baking powder
- 150g Sugar
- 3 tbsp Demerara sugar
Instructions
- Preheat oven to 180’C.
- Peel, core and dice the apples.
- Add to a saucepan over a low heat with a splash of water (and sugar if desired), add in the fresh cranberries, followed by the ground cinnamon.
- Simmer, whilst continuously stirring, until a fruit compote is formed.
- Mix together the milk and egg.
- In a bowl, rub together the flour and butter until a breadcrumb texture is formed. Follow in with the sugar, cinnamon and baking powder.
- Add the wet ingredients to the dry and mix until a thick batter is formed.
- Spoon the fruit compote into your ramekin dishes, top with the cobbler batter – the more rustic looking the better so the fruit oozes through!
- Sprinkle with demerara sugar and bake in the preheated oven for 30 minutes or until cooked through and deliciously golden.
- Leave to cool slightly before topping with a big scoop of Jersey Vanilla ice cream and diving right in!
