Tassili, the fine dining restaurant located within the Grand Jersey Hotel & Spa, has gained recognition for its standard of gastronomy with a listing in the 2025 Michelin Guide.
This achievement from Executive Chef, Nicolas Valmagna (pictured), is a credit to his outstanding skill in curating exceptional cuisine, using local and seasonal ingredients to create a unique dining experience for guests at Tassili. Menus are complemented by a wine list that includes wines from Hand Picked Hotels’ family-owned Tuscan vineyard, Villa Saletta, alongside vintage wines from the Group’s owners Julia and Guy Hands’ personal private wine collection.
Inspired by his heritage, Nicolas uses French culinary styles and ingredients to influence the menu, creating dishes that combine Jersey’s culture with his favourite staples from the regions of Brittany and the Pyrénées.
The Michelin Guide entry for Tassili reads: “This intimate restaurant inside the Grand Jersey Hotel & Spa offers a haven of luxury, not only in its opulent surroundings but also in the ingredients used. While you relax in the elegant room with linen-clad tables, you can expect to enjoy Jersey produce from blue lobster to Angus beef, not to mention excellent wild turbot. While their components are classically luxurious, there’s some playfully creative touches to the dishes. Bespoke wine flights are available to complement the cooking.”
