When it comes to seasonal sweets, you can always count on this delicious Christmassy Stollen!
Before we start – what is a stollen cake? Stollen is a fruit bread of nuts, spices, and dried or candied fruit, coated with powdered sugar or icing sugar. It is a traditional German bread eaten during the Christmas season, when it is called Weihnachtsstollen or Christstollen.

- 150g Plain flour
- 100g Sugar
- 1.5 tsp Baking powder
- 7 tbsp Butter
- 250g Ricotta cheese
- 150g Mixed dried fruit
- 40g Flaked almonds
- 1 tsp Vanilla extract
- Zest of 1/2 lemon
- 1 Egg
- 1 Egg yolk
- 100g Marzipan
- Icing sugar
- 1/4 tsp Salt
Instructions
- Preheat oven to 180’C
- Grease/line a baking tray.
- Combine the plain flour, sugar, baking powder, salt and rub in the butter until the mixture resembles breadcrumbs.
- In a separate bowl, mix together the ricotta cheese, mixed dried fruit, flaked almonds, vanilla extract, lemon zest, egg and yolk and stir mixture into the dry ingredients until fully incorporated.
- Place onto a floured surface and knead 6 times and form an oval loaf shape.
- Roll the marzipan into an oblong and place in the middle of the dough, fold dough over and underneath on the ends to seal.
- Bake in the oven for 45 minutes or until golden and cooked through, patting the base to sound hollow – place on a rack to fully cool.
- Generously dust with icing sugar and why not add a little decoration before slicing and enjoying with family and friends this Christmas!
