Dozens of invited guests enjoyed an exclusive ‘pop up dining event’ in The Atlantic Room at L’Horizon Beach Hotel & Spa last Thursday evening.
Executive Head Chef Andrew Soddy and his team at the AA Four Red Star hotel in St Brelade have created a brand new ‘pop up’ experience which mixes modern British cuisine with Asian influences.
Andrew mingled with guests as they sampled the new dishes including Bouley Bay pan seared scallops with coconut braised red lentil and Granny Smith apple, chaat masala smoked mackerel fillet with mackerel pâté, pickled beetroot and cucumber tartar and sticky glazed chilli pork belly served with butternut squash, soya glazed bok choy and toasted sesame seeds.
With a choice of six starters, six mains and six desserts on the new menu there is plenty for vegetarians too, such as the mixed vegetable korma, pilau rice and mango chutney and the Cajun spiced cauliflower steak, Bombay aloo and coriander salsa.
Local produce also features in abundance with desserts like chilled cardamom rice pudding, caramel raisins, compressed apples and La Mare apple brandy syrup as well as Classic Farm Jersey ice cream.
Commenting on the concept, Shaun McGachan, L’Horizon’s Hotel Manager, said: “This is a really exciting menu with unique flavours that really showcase the culinary and cultural experiences of our Executive Head Chef and his Sous Chef Wali.”
The pop up dining experience is available until 30 March.
