Mourant has appointed four new partners in its Jersey office as part of the firm’s global promotion round, bringing the total number of partners at the offshore legal and governance services business to 64.
Amy Demetriou (pictured) and Sarah Huelin, members of the Jersey corporate team, Mathew Cook, a member of the Jersey litigation practice and Ed Thorogood, global operations director in Mourant Governance Services, all became partners of Mourant LP on 1 February 2020.

Amy Demetriou is a member of the Jersey finance and corporate practice with a particular focus on structured finance, debt capital markets and securitisation transactions for clients including investment banks, private equity groups and issuers. She has significant experience in a wide range of corporate and finance transactions, advising leading global corporate and financial institutions. Amy joined Mourant in 2008 from Simmons & Simmons.
Mathew Cook is a member of the Jersey litigation practice and the firm’s specialist financial services regulatory team. He advises on regulatory compliance, sanctions, information requests and data protection, specialising in cases involving potential regulatory breaches, investigations, remediation and enforcement. He also advises financial institutions on a wide range of high-profile, multi-jurisdictional banking, corporate, funds, trust and property disputes.
Sarah Huelin joined Mourant in 2005 and is a member of the specialist financial services regulatory team, advising financial institutions on legal and regulatory issues affecting their structure, operations, products and services. She regularly advises on the scope and application of Jersey’s financial services and anti-money laundering regimes, including those applicable to banking, investment business, money service business, trust company business and insurance business.
Ed Thorogood joined Mourant in 2018 from Intertrust. He is responsible for Mourant Governance Services’ operations in all its locations, including developing new products and services, the risk and controls framework, and driving technological improvements. Ed trained with PwC Consulting in London and since 2006 has worked extensively in fund administration, strategic and operational roles, including sitting on a number of private equity and debt fund boards and the boards of various regulated entities.
