Jersey Hospitality Association – The minefield of modern day allergens

An interactive two hour training session with Channel Islands Training & Development.

This is a special session for restaurant and bar staff providing them with the knowledge and confidence to enable them to answer questions that customers might ask about the ingredients and allergens contained in food and drink.

This session will cover topics such as understanding what allergens are, how dangerous they can be, an understanding of different diet types – pescatarian/vegetarian/vegan/Halal/low sugar diets, the reasons why people might opt for a dietary change; how allergens can be in unexpected things; milk, fish ,shellfish, nuts, wheat, garlic, specific vegetable and fruit allergens, soya; the difference between gluten free and coeliac; the importance of checking with customers; allergens in drinks.
